Pumpkin Tahini Energy Balls
We’ve been making these Pumpkin Tahini Energy Balls on repeat this season. They’re earthy, lightly sweet, and full of that warm fall spice — like a little bite of pumpkin pie with a nutty twist. We love keeping a batch in the freezer and pulling out a couple whenever we need a little something with hot tea. Just the right bite of cozy — no baking, no fuss, just real ingredients rolled together with a touch of autumn magic.
Makes: about 12–15 balls
Prep time: 10 minutes
Chill time: 20–30 minutes
Ingredients
1 cup rolled oats (old-fashioned or quick)
½ cup unsweetened pumpkin purée
¼ cup tahini (stirred well)
3 tbsp maple syrup or honey
1 tsp vanilla extract
1 tsp pumpkin pie spice
Pinch of sea salt
Optional add-ins:
2 tbsp ground flaxseed or chia seeds
¼ cup mini chocolate chips or chopped dark chocolate
¼ cup chopped Candied Walnut (would be perfect here)
Instructions
In a large bowl, stir together oats, pumpkin purée, tahini, maple syrup, vanilla, and spices until smooth and well combined.
Add any optional mix-ins (flax, chocolate, candied walnut). Stir until evenly distributed.
If the mixture feels too wet, add a few more oats; if too dry, add a bit more pumpkin or tahini.
Scoop and roll into 1-inch balls.
Place on a parchment-lined tray and chill for 20–30 minutes to firm up.
Store in the fridge for up to 1 week, or freeze for longer.
