Our Autumn Spice & Candied Walnut Brie Phyllo Bites are a cozy favorite — buttery phyllo shells filled with creamy Brie, drizzled with honey, and finished with a sprinkle of our small-batch Candied Walnut blend. Sweet, spiced, and just a little toasty, they disappear faster than we can set them out.
We only make Candied Walnut during the fall and holiday season, and these bites are one of the reasons it never lasts long. A simple, golden appetizer that tastes like celebration.

Candied Walnut
Surprisingly simple for something so good.
Ingredients
Store-bought mini phyllo shells (about 15 per box, pre-baked and found in the freezer section)
Brie, rind on and cut into ½-inch cubes
Honey, for drizzling
Fresh thyme leaves, for garnish (optional)
Instructions
Thaw store-bought mini phyllo shells if frozen — about 10 minutes at room temperature.
Preheat oven to 350°F (175°C).
Arrange shells on a parchment-lined baking sheet (or in a mini muffin pan if you want more structure).
Fill each with a small cube of Brie (rind on).
Generously sprinkle with Treehouse + Co Candied Walnut Rub
Bake for 6–8 minutes, until the Brie melts and the edges of the shells are golden.
Drizzle with honey and top with fresh thyme leaves right before serving.
Serving Tip
Serve warm within 15 minutes of baking — the shells stay crisp, the Brie stays gooey, and the flavors are at their best.
Pro Tips
Don’t overfill — a small ½-inch cube of Brie per shell is plenty. It’ll melt and fill the space perfectly.
For a lightly caramelized top, switch on the broiler for the last 30 seconds (watch closely).
Let the Brie come to room temperature before baking for smooth, even melting.
Keep an extra tray ready — they go fast, and you can bake a second batch in minutes.
